This blueberry banana bread is the stuff dreams are made of. Seriously. Made with spelt flour, and naturally sweetened with maple syrup, this bread contains 100% whole foods but doesn’t compromise at all on taste. The maple syrup and bananas make sure the bread stays nice and moist, while a healthy helping of blueberries ensure a burst of flavor in every bite!
To make Monday mornings a little easier, I like to bake a loaf on Sunday evening. That way I dream of it all night, and pop right out of bed come morning. 😉 Ok, maybe I don’t quite pop out of bed, I might still snooze the alarm
once a handful of times, but it does help me get out the door faster. Like my banana oatmeal muffins, this loaf is healthy enough to enjoy for breakfast so I like to slice it up and store in individual containers in the fridge for an easy grab and go breakfast on hectic weekday mornings.
Making this bread is fast and easy. The only really rule to follow is to make sure you mix your dry ingredients in one bowl, wet in another, and then combine. I’m a big fan of one bowl meals but it doesn’t work well here. Consider yourself warned! 😉
Once all of your ingredients are combined you will place them into a loaf pan. Rather than greasing the pan with oil or butter I prefer to line it with parchment paper for easy clean up!
You can enjoy this Blueberry Banana Bread plain, top with a little butter, or slather on some almond butter for a real treat!

- 2 cups spelt flour
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1/3 cup coconut oil
- 1/3 cup maple syrup
- 1 tsp vanilla
- 1 cup mashed bananas (approx. 2 1/2 bananas)
- 1 cup frozen blueberries
Preheat oven to 325 degrees.
Mix dry ingredients (flour, cinnamon, baking soda, and salt) in a bowl. Stir to combine. Set aside.
In a separate mixing bowl, combine eggs, coconut oil, maple syrup and vanilla. Beat or whisk together.
Add banana to the wet ingredients and stir to combine.
Add dry ingredients into the bowl with the wet ingredients, stirring to combine.
Fold the frozen blueberries into the batter.
Line a loaf pan with parchment paper (or oil the pan) and add in the batter. Use a knife to level off the top, and place in the oven.
Bake for 1 hour. To check that the bread is done insert a knife into the center. It should come out clean when it is done cooking. Let sit on a baking rack for 15 minutes to cool before slicing.
