Spring has finally sprung my friends, at least according to the calendar it has. Mother nature is slowlyyy catching up. Here in southern Ontario, the start of spring can usually be marked by the sap flowing through the maple trees, and you know what that means … MAPLE SYRUP!
If you’ve been a reader for a while now you will know that maple syrup is one of my absolute favourite sweeteners. It’s natural, contains lots of nutrients, and I can locally source it! With the first bottles of syrup from this season starting to hit the shelves at local markets, I couldn’t resist cooking up a batch of Crunchy Maple Pecan Granola to celebrate.
The combination of maple syrup, pecans, almonds and cinnamon is absolutely delightful. As if that’s not reason enough to bake up a batch, the smell is divine! My house smells all sweet and toasty and cinnamon-y … I’m in heaven!
Granola is incredibly easy to make at home, and tastes approximately 1000000% better than any you’ll ever buy at the store. With just four simple steps, it’s a no brainer really!
Step 1 & 2 : Mix wet ingredients in a bowl. Mix dry ingredients in a bowl.
Step 3 : Combine wet & dry ingredients and spread on a lined baking sheet.
Step 4 : Bake in oven for 75 minutes at 250 degrees.
Smell that? It. Smells. So. Good.
Life tip : Bake granola right before having company over. You’ll have friends for life. No one can resist that smell. As a bonus, they’ll be so consumed by the smell they won’t even notice if the shelves aren’t dusted and floors aren’t vacuumed.
Cooking > cleaning. Always.
When you remove the granola from the oven it will still feel a bit soft to the touch. Let it cool in the pan for about 15 minutes before moving. As it cools it will crisp up and form yummy clusters of maple pecan granola goodness. You can store the granola in an airtight container for up to three weeks.
I usually eat my granola one of three ways :
- Like cereal in a big bowl with milk
- Layered with yogurt (see how you can make some at home) and fruit, parfait style
- Straight up with my fingers as a mid day snack

- 3 cups rolled oats
- 1 1/2 cups pecan pieces
- 1/2 cup sliced almonds
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 2 tsp ground flax seed
- 1 tsp vanilla
- 1/2 cup maple syrup
- 6 tbsp coconut oil
Preheat oven to 250 degrees.
Combine oats, nuts and spices in a big bowl.
In a separate bowl combine maple syrup, coconut oil and vanilla.
Pour the wet mixture over the dry ingredients and stir very well.
Line a baking sheet with parchment paper, and pour the mixture into the center of the baking sheet. Spread out in an even layer with a spatula.
Bake for 75 minutes. Let cool & enjoy!
