These. Meatballs. Are. The. Bomb! You know when someone mentions your favourite food and you get so excited, and then you try their version and it’s a total letdown. Ya, well don’t worry because that’s not going to happen here! These overnight meatballs are the absolute best. The recipe is an old family favourite and they are a hit every. single. time. Lucky for us there are lots of occasions where you can serve meatballs.
Huh? Ya, you read that right. Meatballs can be so versatile and are the perfect food for many occasions. Holiday potluck coming up at the office? Grab your slow cooker, some toothpicks for serving, these meatballs, and you’ll be the hit of the party. Craving comfort food for dinner? What better comfort food than spaghetti and meatballs!? Have hungry guests arriving at staggered times? Meatball sandwiches it is (total staple in my family for long weekends at the cottage with people trickling in all throughout the evening!) 🙂
#protip1 : handle these little guys with kid gloves. Work the mixture with your fingertips just enough to get it all mixed up, but you want to avoid over-working the meat. This is the key to a tender meatball!
#protip2 : If you don’t have a large slow cooker, make a half batch, or plan to have these cooking away on the stove throughout the day. Do as I say and not as I do my friends, unless you want to set your alarm for 2am to stir the meatballs in which case go ahead and make these at 9pm 😉 You can read all about that story here.
Before we get on with the recipe let’s just pause and take a second to drool over this sandwich …
Note : recipe serves approx. 25 as an appetizer and approx. 15 as dinner with spaghetti or in meatball sandwiches.
- 3 cups water
- 1 tin tomato juice (28 oz)
- 1 tin tomato paste (12 oz)
- 1/2 cup olive oil
- 1 tsp oregano
- 1 tsp basil
- 1 tsp parsley
- 1 tsp salt
- 1 bay leaf
- 1/4 tsp cinnamon
- 1 clove garlic
- 2 lbs lean ground beef
- 2 lbs ground pork
- 4 eggs
- 1 cup bread crumbs
- 2 tsp parsley
- 2 tsp salt
- 1 tsp garlic salt
- 1/2 tsp ground pepper
- 6 tbsp grated parmesan cheese
Combine all of the ingredients listed from water down to garlic in a large pot and bring to a boil. (Alternatively cook meatballs in a slow cooker on low for 8-10 hours)
Combine all of the ingredients listed from ground beef down to grated parmesan cheese in a bowl.
Mix together all the ingredients for the meatballs with your hands. Mix until just combined, being careful not to overwork the mixture.
Roll approx. 1 - 1 1/2 tbsp. of meat mixture into meatballs. Repeat until complete.
Add meatballs to boiling sauce, and reduce heat to a simmer. Cook for 6-8 hours.
*Alternatively to cooking on the stove, this recipe can be made in an XL crockpot.
