As far as sports go, football is at the bottom of my list of ones I enjoy watching. Right down there with it … soccer. I like hockey and baseball, can handle the odd basketball game, but football just isn’t my thing. I feel lost during the whole game, don’t understand the rules, and can’t help but feel like they do a whole heck of a lot of standing around chatting in huddles! 😉 Some sports I would rather be watching? Curling, figure skating, darts … pretty much anything beats football in my books. There is one game I look forward to though. With Super Bowl right around the corner, I can’t help dreaming up all the yummy snacks I can enjoy while taking in the commercials and half time show! On the menu this year are Spicy Sweet Potato Toast Tacos.
If you haven’t heard of it yet, sweet potato toast has been taking Pinterest and the internet by storm. A gluten-free, low carb alternative to bread, people are testing out all kinds of topping combos on their sweet potato toast. I’m not always into these short lived food fads, but as a big sweet potato fan, this is a trend I can definitely get on board with! When deciding what to top my toast with for the big game it just made sense to me to combine two favourites – sweet potato and tacos! The sweet potato toast transforms these tacos into a two bite appetizer that is perfect for parties.
To make the bite sized sweet potato toast, I cut the potato widthwise. If you are want a bigger snack, cutting lengthwise will give you a larger slice. A little olive oil on each side and your toast is ready for the oven.
The “filling” for these tacos uses ground turkey, a leaner option than ground beef, and homemade taco seasoning. It can be cooked up in under 10 minutes, which is exactly the kind of no fuse option I like. Top it off with some chopped green onions and tomatoes and this snack is ready for serving!
Spicy Sweet Potato Toast Tacos are the perfect appetizer for your Super Bowl menu. Ground turkey and sweet potatoes transform the classic taco into a healthy, gluten free, Paleo and Whole 30 friendly appetizer that everyone can enjoy.
- 3 sweet potatoes
- 2 tbsp olive oil
- 1 package ground turkey (approx 0.6 kg)
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp oregano
- 1/2 tsp red chili flakes
- 1/4 cup water
- 1/4 cup green onion
- 1/4 cup cherry tomatoes
Preheat oven to 400 degrees.
Slice each sweet potato widthwise into 8 rounds. Drizzle each side in olive oil, place on a baking sheet lined with parchment paper, and place in oven. Bake for 30 minutes, flipping half way through.
Heat skillet on medium heat on stovetop and add 1 tbsp. olive oil.
Add ground turkey, water and seasoning to pan and cook for 5-6 minutes until turkey is fully cooked. Remove from heat.
Dice green onion and tomatoes.
Once sweet potatoes are cooked, place on serving tray. Add 2 tbsp. of meat mixture to each round, and top with a pinch of green onions and tomatoes. Serve while still warm. Enjoy!
