I’m doing something a little different around here this week. With Christmas only 8 days away I spent the weekend baking up a storm and this week I’m going to share all of the recipes with you. One recipe each day for the next five days. That’s five fabulous cookies just in time for Christmas! First up are Whipped Shortbread cookies. These classic cookies have been a holiday favourite in my family forever, and are a must have for any Christmas cookie tray.
Now, you know I like easy recipes that don’t keep me in the kitchen for long, and at this time of year who has the time to spend hours on a cookie recipe? I STILL don’t even have my shopping done (or started really … eek!) so easy is definitely the name of the game for me. I also want cookies that will impress though, and don’t want to compromise on taste … basically I want it all! With only 5 ingredients and a melt in your mouth texture, these cookies live up to everything I’m looking for and more!
Unlike traditional rolled shortbread, these whipped shortbread cookies require no kneading, no rolling … basically they are no work! Just a quick spin in your mixer, or with beaters, and they are ready to be plopped on a cookie sheet and throw into the oven. No work and melt in your mouth cookie goodness?! That’s what I’m talking about!

- 3 cups flour
- 1/2 cup corn starch
- 1 cup icing sugar
- 1 lbs butter
- 18 maraschino cherries
Preheat oven to 350 degrees.
Whip butter in a mixing bowl (with mixer or beaters).
Add cornstarch and icing sugar to the butter and beat until combined.
Add flour to mixture and continue beating until completely combined.
Spoon cookies onto baking sheet lined with parchment papers (cookies should be approx. 1 to 1.5 inch balls)
Top each cookie with 1/2 of a maraschino cherry.
Cook in oven for 10-12 minutes, or until just starting to turn golden on the edges.
Let cool before removing from baking sheet. Enjoy!
