Crunchy Maple Pecan Granola

Maple syrup, pecans, almonds and cinnamon combine together for some crunchy clusters of granola goodness! As if that's not reason enough to bake up a batch, the smell is divine ... all sweet and toasty and cinnamon-y ... yum!

Ingredients

  • 3 cups rolled oats
  • 1 1/2 cups pecan pieces
  • 1/2 cup sliced almonds
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 tsp ground flax seed
  • 1 tsp vanilla
  • 1/2 cup maple syrup
  • 6 tbsp coconut oil

Instructions

  1. Preheat oven to 250 degrees.
  2. Combine oats, nuts and spices in a big bowl.
  3. In a separate bowl combine maple syrup, coconut oil and vanilla.
  4. Pour the wet mixture over the dry ingredients and stir very well.
  5. Line a baking sheet with parchment paper, and pour the mixture into the center of the baking sheet. Spread out in an even layer with a spatula.
  6. Bake for 75 minutes. Let cool & enjoy!
