Banana Oatmeal Muffins

Banana Oatmeal Muffins that are healthy enough for breakfast, or throw in a handful of chocolate chips for an ooey gooey treat!

Ingredients

  • 1 1/2 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 mashed bananas
  • 1/2 cup milk
  • 1/3 cup coconut oil
  • 1/3 cup honey
  • 1 tsp vanilla
  • 1 egg
  • 1 cup chocolate chips (optional)

Instructions

  1. Mix dry ingredients together in a bowl.

  2. In a separate bowl, mash bananas with a fork.
  3. Add wet ingredients to mashed bananas.
  4. Add dry ingredients to the wet.
  5. Fold in chocolate chips (if using).
  6. Let mixture sit for 5-10 mins before putting into muffin tins. *You can skip this step but I don't recommend it. Letting it rest will result in fluffier muffins!
  7. Transfer mixture to muffin tin and bake for 20mins at 400 degrees.
