Spicy Sweet Potato Toast Tacos are the perfect appetizer for your Super Bowl menu. Ground turkey and sweet potatoes transform the classic taco into a healthy, gluten free, Paleo and Whole 30 friendly appetizer that everyone can enjoy.
1packageground turkey (approx 0.6 kg)
1/2tspred chili flakes
1/4 cupgreen onion
1/4cup cherry tomatoes
Preheat oven to 400 degrees.
Slice each sweet potato widthwise into 8 rounds. Drizzle each side in olive oil, place on a baking sheet lined with parchment paper, and place in oven. Bake for 30 minutes, flipping half way through.
Heat skillet on medium heat on stovetop and add 1 tbsp. olive oil.
Add ground turkey, water and seasoning to pan and cook for 5-6 minutes until turkey is fully cooked. Remove from heat.
Dice green onion and tomatoes.
Once sweet potatoes are cooked, place on serving tray. Add 2 tbsp. of meat mixture to each round, and top with a pinch of green onions and tomatoes. Serve while still warm. Enjoy!
