Spicy Sweet Potato Toast Taco

  • 3 sweet potatoes
  • 2 tbsp olive oil
  • 1 package ground turkey (approx 0.6 kg)
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp oregano
  • 1/2 tsp red chili flakes
  • 1/4 cup water
  • 1/4 cup green onion
  • 1/4 cup cherry tomatoes


  1. Preheat oven to 400 degrees.
  2. Slice each sweet potato widthwise into 8 rounds. Drizzle each side in olive oil, place on a baking sheet lined with parchment paper, and place in oven. Bake for 30 minutes, flipping half way through.
  3. Heat skillet on medium heat on stovetop and add 1 tbsp. olive oil.
  4. Add ground turkey, water and seasoning to pan and cook for 5-6 minutes until turkey is fully cooked. Remove from heat.
  5. Dice green onion and tomatoes.
  6. Once sweet potatoes are cooked, place on serving tray. Add 2 tbsp. of meat mixture to each round, and top with a pinch of green onions and tomatoes. Serve while still warm. Enjoy!
