Blueberry Banana Bread

With bursts of blueberries in every bite, this is not your average banana bread. Made with spelt flour, and sweetened with maple syrup and bananas, this Blueberry Banana Bread is healthy enough to eat for breakfast but doesn't sacrifice on taste.

  • 2 cups spelt flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • 1 cup mashed bananas (approx. 2 1/2 bananas)
  • 1 cup frozen blueberries


  1. Preheat oven to 325 degrees.
  2. Mix dry ingredients (flour, cinnamon, baking soda, and salt) in a bowl. Stir to combine. Set aside.
  3. In a separate mixing bowl, combine eggs, coconut oil, maple syrup and vanilla. Beat or whisk together.
  4. Add banana to the wet ingredients and stir to combine.
  5. Add dry ingredients into the bowl with the wet ingredients, stirring to combine.
  6. Fold the frozen blueberries into the batter.
  7. Line a loaf pan with parchment paper (or oil the pan) and add in the batter. Use a knife to level off the top, and place in the oven.
  8. Bake for 1 hour. To check that the bread is done insert a knife into the center. It should come out clean when it is done cooking. Let sit on a baking rack for 15 minutes to cool before slicing.
