Fennel and Arugula Orange Salad and Poppy Seed Dressing

Sweet fennel and oranges compliment peppery arugula tossed in a tangy poppy seed dressing that brings together all of the flavours in this vibrant salad.

  • 4 cups arugula
  • 1 cup fennel
  • 1/4 cup sliced almonds
  • 1 naval orange
  • 1/2 cup yogurt (see notes)
  • 2 tbsp poppy seeds
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp yellow onion
  • 1 tsp dijon mustard
  • 1/4 tsp salt


  1. Thinly slice fennel (easiest to use a mandolin for this).
  2. Peel orange and cut segments in half.
  3. Combine arugula, fennel, orange segments and sliced almonds in a bowl and set aside.
  4. Combine yogurt, poppy seeds, apple cider vinegar, honey, yellow onion, Dijon mustard and salt in a blender. Blend well to combine.
  5. Pour dressing over salad, toss, and enjoy!

Recipe Notes

For a very creamy dressing use greek yogurt, for a thinner dressing use regular yogurt.
